Larb is a dish found in north eastern Thailand (Isaan) and is also the national dish of Laos. It's a salty, sour, herbaceous ground mince that is deeply ingrained in Laotian culture, representing prosperity and luck. While traditionally made with fish, wild meat, or ground pork, this version uses ground chicken and optionally adds white beans for extra fiber (not traditional) and lemongrass for flavor.
